SPAM® Butterscotch Cookies

Recipe courtesy of SPAM®

Ingredients:

1 cup butter, softened

1 cup sugar

1 cup firmly packed brown sugar

½ teaspoon vanilla extract

2 eggs

3 cups flour

1 teaspoon baking soda

½ teaspoon salt

½ (12-ounce) can SPAM® Classic, cut into

small cubes

½ cup butterscotch chips

Instructions:

1. Heat oven to 375°F.

2. In large bowl, mix butter, sugars, vanilla and eggs.

3. Stir in flour, baking soda and salt.

4. Stir in SPAM® Classic and butterscotch chips.

5. Drop dough by rounded tablespoonsful about 2 inches

apart onto lightly greased baking sheet.

6. Bake 8 to 10 minutes or until light brown.

7. Cool slightly; remove from baking sheet. Cool on wire rack.
