Goat Cheese & Butternut Squash Quiche Cups
Ingredients
- Egg bake
- 1 cup heavy cream
- 1 cup milk
- 2 eggs
- 1 yolk
- 1 tsp salt
- 1 tsp pepper
- 2 tsp honey
- Butternut squash, cubed
- 1 tsp salt
- 1 tsp pepper
- 2 tsp honey
- 4 oz goat cheese
- Puff pastry, store bought
Instructions
- Whisk all egg bake ingredients until mixed, set aside.
- Mix butternut squash, salt, pepper, and honey until coated. Roast butternut squash in oven at 400 degrees for 30-35 minutes. Let cool.
- Grease cupcake pan. Cut puff pastry into circles large enough to fit inside each hole to the top. Place one puff pastry in each hole. Par bake puff pastry with parchment paper and baking beans. Remove parchment paper and beans, do not remove pastry from pan, and let cool.
- Add squash, one dollop of goat cheese, and pour egg bake to top of puff pastry.
- Bake at 350 degrees for 25 minutes until shaking and the egg is not wet. Let cool for 5 minutes.
- Add black pepper and honey taste.
