Coconut Black Walnut Cake
5 Eyewitness News Anchor Paul Folger joins us to show us how to make coconut black walnut cake.
Recipe:
For cake
2 cups Sugar
1 cup veg oil
4 eggs beaten
3 cups all purpose
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup buttermilk
1 cup chopped black walnuts
1 cup flaked coconut
2 teaspoons coconut extract
Preheat oven to 325.
Combine sugar, oil and eggs. Beat well. Combine dry ingredients into sugar mixture, alternating with buttermilk a bit at a time. Beat well after adding each. Stir in coconut, nuts, and flavoring. Pour batter into a well- greased tube pan. Bake for one hour and 15 minutes or until done. Poor hot coconut syrup over the hot cake. Let sit in cake pan for four hours. I let my cake sit in the refrigerator a couple of days and then serve it at room temperature.
For Syrup
1 cup sugar
1/2 cup water
2 tablespoons butter
1 teaspoon coconut extract
Combine ingredients in a saucepan. Bring to a boil, boil for five minutes. Pour this hot mixture over cake as it comes out of the oven.
