White Chicken Chili

Director of Programming and crockpot enthusiast, Mandy Tadych, shares her recipe for a White Chicken Chili that she things would be perfect for Halloween night.

Ingredients
1 ½ pounds boneless, skinless chicken thighs
Your favorite chicken seasoning & EVOO
4 cups chicken bone broth
2 4-ounce cans diced green chiles
1 can cannellini beans, drained and rinsed
1 can hominy
1 medium onion, diced
1 green pepper, diced
1 jalapeño, diced
4 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
½ packet of ranch dressing
Kosher salt and freshly ground black pepper, to taste
2 tablespoons freshly squeezed lime juice
½ block of cream cheese

Instructions
•Sprinkle chicken with seasoning and then sear in cast iron w/ EVOO or bacon grease
•Remove chicken and place in slow cooker
•Add onions, peppers, jalapeno and cook for 1-2 minutes, add garlic and cook for another minute, then add veggies to slow cooker
•Stir in bone broth, green chiles, beans, cumin, oregano, and ranch dressing mix
•Cover and cook on low heat for 7-8 hours or high heat for 5-6 hours.
•Shred chicken
•Add cream cheese, beans & hominy and cook for another 20-30 minutes
•Season with salt and pepper, to taste.
•Serve with desired toppings.

Shredded Monterey jack cheese
Freshly squeezed lime juice
Cilantro
Avocado
Hot sauce
