Recipe:
Pie Crust, you can be fancy and make your own but you can use premade
5 oz. Crumbled goat cheese, leave about 1.5 inch on the outside of the pie crust
Caramelized onions (½ white onion & butter – low and slow on the stovetop. This takes time and lots of stirring)
Heirloom tomato slices (can use other varieties, not just heirloom)
Fresh thyme
Salt & pepper
Fold in the edges of the pie crust and brush with egg. Sprinkle flakey sea salt. Bake at 375 degrees for one hour. Once done, drizzle with balsamic reduction.
