Staff Salad Challenge

It is the season for salads, so we celebrate by having our staff compete in a salad challenge! Today, Twin Cities Live producer Betsy Melin and Minnesota Live Producer Lauren Andrego share their recipes for their takes on seasonal side dishes!

Try out their recipes today:

Betsy’s Veggie Salad:

  • 4 c whole kernel corn
  • 1 c chopped celery
  • ½ c chopped green pepper
  • ¼ c sliced green onion
  • ¼ c chopped parsley
  • ½ tsp dill weed
  • Combine

For the dressing:

  • ¾ c canola or corn oil
  • ¼ c white vinegar
  • 1 tsp sugar
  • ½ tsp salt
  • ½ tsp paprika
  • ½ tsp dry mustard
  • ¼ tsp hot sauce
  • Combine to create dressing. Toss well
  • Marinate for at least one hour
  • Drain Salad
  • Add 1 c diced tomato

Lauren’s Fruit Salad

  • 6 cups seedless watermelon, chopped
  • 3 cups mini mozzarella balls
  • 6 English cucumbers, chopped
  • Fresh mint to taste
  • Serve in bowls and drizzle with balsamic glaze
