Staff Salad Challenge

It is the season for salads, so we celebrate by having our staff compete in a salad challenge! Today, Twin Cities Live producer Betsy Melin and Minnesota Live Producer Lauren Andrego share their recipes for their takes on seasonal side dishes!
Try out their recipes today:
Betsy’s Veggie Salad:
- 4 c whole kernel corn
- 1 c chopped celery
- ½ c chopped green pepper
- ¼ c sliced green onion
- ¼ c chopped parsley
- ½ tsp dill weed
- Combine
For the dressing:
- ¾ c canola or corn oil
- ¼ c white vinegar
- 1 tsp sugar
- ½ tsp salt
- ½ tsp paprika
- ½ tsp dry mustard
- ¼ tsp hot sauce
- Combine to create dressing. Toss well
- Marinate for at least one hour
- Drain Salad
- Add 1 c diced tomato
Lauren’s Fruit Salad
- 6 cups seedless watermelon, chopped
- 3 cups mini mozzarella balls
- 6 English cucumbers, chopped
- Fresh mint to taste
- Serve in bowls and drizzle with balsamic glaze
