Eating healthy isn’t cheap but there are ways to stretch those dollars and get some tasty and healthy options for snacking. Registered dietitian Carissa Galloway with Zest Communications shows us some smarter ways to snack, sip, and save.

Wonderful Pistachios Banana Oatmeal Cookies

Makes 12 cookies

Ingredients

2 medium bananas
1.5 cups oatmeal (or combine 1/2 cup rolled and 1 cup quick)
1/3 cup mini unsweetened raisins
1/3 cup chopped Wonderful Pistachios No Shells Roasted Lightly Salted

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Line a rimmed baking sheet with a silpat mat or coat with some cooking spray.
  3. Using the back of a fork, mash bananas in a medium bowl until they are broken down. Add in oats and gently stir until all of the oats and bananas are mixed together and look like a thick cookie batter.
  4. Now you can add the raisins and pistachios! Sprinkle them into the dough and stir until they are just mixed throughout.
  5. Scoop one heaping tablespoon of the dough into your hands and free form into a cookie. Place on cookie sheet, and continue until you have 12 cookies.
  6. Cook for 12-15 minutes or until set through and lightly golden. Cool and enjoy!

 

POM Wonderful, Orange & Mint Spritzer

½ cup POM Wonderful 100% Pomegranate juice
1 ½ tsp fresh orange juice
½ cup sparkling/soda water
2 large sprigs fresh mint
1 slice Orange

In a large glass, stir together the pomegranate juice and lemon juice. Add ice to fill the glass. Then slowly pour in the sparkling/soda water. Insert the mint sprigs, using the sprigs to gently stir the spritzer. Garnish with the lemon slice.
