Side Salads with Laurie Crowell

Laurie Crowell from Golden Fig in Saint Paul shows us three delicious salads to go with your pizza.

Spinach Salad with Blackberries

6 C fresh spinach
1/2 C pickled red onions
1 C fresh blackberries
4 oz chevre
1/2 C extra virgin olive oil
1/4 C Vanilla Balsamic
1 tsp coarse mustard
Salt and pepper to taste

In a small jar place olive oil, balsamic, mustard, salt and pepper. Twist lid on and shake until emulsified.

Arrange salad, seasoning as you layer.

Drizzle vinaigrette and serve

 

Antipasto Salad

8 C coarsely chopped romaine
7 oz roasted red peppers-drained and chopped
6 oz artichoke hearts pitted and halved
1/2 C red onion, thinly sliced
1 cup hard salami, sliced
1/4 C sundried tomatoes in oil chopped (save the oil for the vinaigrette)
1 or two pepperoncini sliced into rounds
1/2 C pitted kalamata olives cut in half
1/2 C parsley leaves chopped

Italian Dressing

6 TB oil- use oil reserved from above ad add olive oil to make 6 TB total
1/4 C red wine vinegar
1 garlic clove, minced
1 tsp coarse ground mustard
1/2 tsp sugar
1/2 tsp salt
1/4 tsp black pepper

In large bowl toss salad ingredients together.

In shaker jar pour all dressing ingredients. Twist lid on and shake until emulsified and smooth

Pour dressing over and toss to coat.

 

Mixed Greens with SweeTango Apples and Blue Cheese

6 Cups mixed greens
2 SweeTango apples diced
1/2 C crumbled blue cheese
3 TB bacon bits
handful fresh dill

Maple Mustard Vinaigrette

1/3 C extra virgin olive oil
2 TB cider vinegar
1 TB maple syrup
1 TB coarse mustard
salt and pepper to taste

Put all ingredients in jar, shake to emulsify.

In a large bowl, toss greens, apples, blue cheese, bacon bits & dill.

Drizzle over vinaigrette. Toss to coat.
