Peaches from Tree-Ripe

Now is the season for peaches! Tree-Ripe is a family-owned business focused on bringing perfectly ripe fruit directly to your doorstep from the tree. Jamie Preuss, the creator of So Happy You Liked it blog, creates some recipes using the sweet fruit.

Tree-Ripe trucks will be in the greater Minneapolis area with fresh Georgia peaches June 21-27 and returning July 12-26 at various neighborhoods. Check out their website for all locations, dates and times!

Peach Caprese Baguette Sandwiches

Ingredients
  • 1 large baguette, halved and cut into quarters
  • 2 Roma tomatoes, sliced
  • 1-2 peaches, halved and sliced
  • 8 basil leaves
  • 4 oz. fresh mozzarella sliced (you can find this pre-sliced which I highly recommend for ease!)
  • 1-2 Tbsp. olive oil, for drizzling
  • Balsamic glaze, for drizzling
  • Salt and fresh cracked pepper
Directions
  • Lay each baguette quarter open-faced on a cutting board.
  • Layer fresh mozzarella, sliced tomato, sliced peaches, and basil leaves on each baguette.
  • Drizzle with olive oil and balsamic glaze. Sprinkle with salt and fresh cracked pepper.
  • Top each sandwich with the other half of the baguette and serve! If transferring, roll each sandwich in wax or parchment paper and use a piece of twine or a rubber band to secure them.

Peach Sun Tea

Ingredients
  • 2 gallons water
  • 16 black tea bags, string and tag removed, keeping bag intact
For the peach simple syrup:
  • 1 1/2 cups sugar
  • 2 cups water
  • 2-3 large peaches, pits removed and roughly chopped
To Serve:
  • Fresh mint
Instructions
  • Fill large beverage dispenser with 2 gallons of water. If your vessel is smaller, simply adjust the amount of tea bags you add to the water.
  • Add tea bags to water and cover. Allow tea to sit in the sun for at least 2 hours, which will allow the tea to steep and the flavors to release. Sample to determine if more time is needed for the tea to steep. Once ready, remove the tea bags from the container.
For the peach simple syrup:
  • As the tea steeps, prepare the peach simple syrup. Combine sugar and water in a medium saucepan set over medium heat. Swirl the pan every so often until the sugar dissolves. Remove from heat.
  • Add roughly chopped peaches. They don’t need to be finely chopped: they will simply infuse the syrup and then be discarded (or else they would be delicious spooned over ice cream!). Allow the syrup to steep, covering and allowing it to cool at room temperature.
  • When tea is ready, strain peaches from simple syrup and pour liquid into tea. Stir to combine, add ice, and serve! Fresh mint and peach slices are perfect garnishes!
