One Pan Stovetop Penne with Asiago

Two years ago, right before Elizabeth went on her last maternity leave, she cooked with Cookbook Author Robin Asbell over Zoom. It was an easy, tasty, stovetop mac and cheese recipe. She shows us a similar quick pasta recipe.

One Pan Stovetop Penne with Asiago
Makes 4 cups
1 1/2 cups whole milk
2 cups water
1/4 cup minced onion
1 large carrot, quartered and sliced
1 slice lemon peel, pared
1/2 teaspoon salt
1/2 teaspoon black pepper
8 ounces penne pasta
4 ounces aged asiago, shredded
1/2 cup shredded parmesan cheese
1/2 cup fresh basil
Place milk, water, onion and carrot in a 4 quart saucepan over medium-high heat. Bring to a full boil, then stir in the lemon peel, salt, pepper and penne. Stir and bring to a boil, then reduce to keep at a simmer. Stir frequently for 12-14 minutes. Start testing the pasta. When just al dente, stir in the cheese and keep stirring until melted and creamy. Stir in the basil. Serve hot.
