Super Bowl Snacks

If you’re watching the Super Bowl from home this year and are looking for some new recipes to try, we’ve got you covered. Jaime Preuss from “So Happy You Liked It” has 32 snack ideas, and is here with us in studio to have us try three of them!

  1. Loaded Sweet Potato Skins

  • Halve four sweet potatoes and place them cut side down on a baking rack that is placed in a baking sheet. This helps promote even baking throughout, as opposed to placing the halves directly on the baking sheet.
  • Brush each halve with olive oil, and sprinkle with salt and pepper.
  • Bake for 30 minutes at 375°.
  • Remove from the oven, and flip sweet potatoes cut side up. Using a spoon, gently remove some of the sweet potato flesh from the skin, creating a hollowed out shell.
  • Sprinkle with cheddar cheese and return to the oven for an additional 5 minutes.
The Toppings:
  • Cooked chicken tossed in spicy buffalo sauce
  • Chopped celery
  • Pickled Red Onions
  • Green Onions
  • Crumbled Blue Cheese
  • Blue Cheese Dressing

2. Pineapple Jalapeno Margarita

  • Muddle jalapeno and lime slices in a cocktail shaker. Top with ice.
  • Add pineapple juice, lime juice, orange liqueur, and tequila. Shake vigorously for at least 10 seconds.
  • Wet the rim of your glass with a lime slice. Dip rim in coarse sea salt.
  • Add ice, pour drink in to glass. Garnish with jalapeño slice, pineapple leaf, or a slice of fresh pineapple.

3. Brown Butter and Butterscotch Rice Krispie Treats

  • Melt butter in a large stock pot set over medium heat. As the butter melts, swirl the pan every so often. Cook until the butter begins to smell toasty and brown bits appear on the the bottom of the pan. Use a spatula or spoon to scrape the brown bits, and add marshmallows, reserving 1 cup. Stir until the marshmallows are melted – add vanilla and salt.
  • Add the crips rice cereal, reserved marshmallows, and butterscotch chips. Stir carefully to combine completely .
  • Press mixture in a 9×11 pan that has been lightly coated with cooking spray. Sprinkle a few butterscotch chips on top, and allow to set for at least 30 minutes. Cut into squares and serve!
