Roasted Red Pepper & Spinach Frittata
Fitness Expert and certified nutritionist, Nickie Carrigan, makes a healthy frittata for Monday Night Meal.

6 Eggs (beaten)
1/4 cup unflavored almond or oat milk (or cow milk)
2 cloves minced garlic
Salt & Pepper (to liking)
Olive oil
Jarred Roasted Red Peppers
Fresh Spinach
1/2 red onion or whole shallot
Cheese of choice (measure with your heart 🫶🏻)
Fresh herbs of choice are optional as well.
Preheat oven to 400 degrees
In cast iron skillet (or oven safe skillet), heat a drizzle of olive oil over med heat.
Add onion, salt & pepper, garlic and heat until translucent.
Then, add chopped roasted red peppers and spinach.
Once spinach is wilted, pour egg mixture into the pan, and evenly distribute the egg mixture.
Add cheese, and any fresh herbs of choice, and pop into the oven for about 20 min, or until eggs are set/ cooked through.
