Brunch Week: Compound Butters

By now you’ve probably heard about butter boards.  It’s been one of the biggest trends in the foodie world. 

Five Eyewitness News anchor, Paul Folger, took that idea and decided he could make his own compound butters!  Serve with a variety of breads and it would be just perfect for a brunch!

Recipes: 

Cinnamon Butter

1 stick unsalted butter
½ cup honey
2 teaspoon cinnamon
½ teaspoon white sugar
1 tablespoon confectioner sugar

Orange butter

1 stick unsalted butter
Zest 1 orange
1 tablespoon of juice from the orange
1 tablespoon of confectioner sugar

Banana butter (this is not very sweet)

1 stick unsalted butter
1 extra ripe banana

Garlic thyme lemon butter

1 stick unsalted butter
3 cloves of garlic (finely minced)
½ teaspoon salt
1 teaspoon pepper
½ teaspoon lemon zest
5 or 6 fresh thyme branches. Pull off all the leaves and throw out stems.

Using a small food processor blend all ingredients together. Can serve at room temperature or place mixture in parchment paper and roll into a log shape and refrigerate.
