12 Days of Cookies: Hot Chocolate Cookies

It’s day 10 of our 12 Days of Cookies.  Anne from Honey + Rye Bakehouse makes Hot Chocolate Cookies and pairs them with Bridgeman’s Vanilla ice cream.

Yields 2 dozen.

INGREDIENTS

● ⅔ cup vegetable oil
● 1 ½ cup granulated sugar
● ⅓ cup maple syrup
● ¼ cup almond milk
● 1 tsp vanilla
● 2 ½ cup all-purpose flour
● 1 cup cocoa powder, sifted
● 1 ½ tsp baking soda
● ½ tsp salt
● ½ tsp cinnamon
● ½ tsp cayenne

CINNAMON SUGAR

● ½ cup granulated sugar
● 1 ½ tsp cinnamon

DIRECTIONS

1. Preheat oven to 350°.

2. In a large bowl or stand mixer fitted with the paddle attachment, combine first 5 ingredients.

3. In a separate bowl, combine dry ingredients.

4. Add dry ingredients to wet and mix until just combined. Scrape bowl down with spatula to ensure all dry ingredients are fully incorporated. Do not over mix.

5. Portion into approximately 24 dough balls.

6. Roll dough balls in cinnamon sugar mixture, place on parchment lined baking sheet & press lightly to flatten.

7. Bake 10 minutes, rotating halfway through.
