Restaurant featuring James Beard award-winning chef is latest addition to Omni Viking Lakes Hotel in Eagan

The Minnesota Vikings’ development of a large piece of property in Eagan will now include a restaurant led by a local James Beard award winner.

Minneapolis-based chef Ann Kim will lead the culinary programming of the Omni Viking Lakes Hotel’s restaurant, Kyndred Hearth, according to an announcement made Thursday.

The restaurant will include a copper-encased, wood-fired pizza oven and the menu will feature wood-fire pizzas, handmade pastas, small plates as well as variations on "nostalgic favorites," including a fried fish sandwich, cheeseburger and soft-serve ice cream.

"As a lifetime Vikings fan, I’m thrilled to collaborate with my hometown team and Omni Hotels to offer the pizzas that I’m known for, and also share my culinary expression on beloved classics," Kim said in a statement. "I’m especially excited to introduce the community to some delicious new offerings, including handmade pastas, my take on a Korean Fried Chicken sandwich, elevated items like braised Korean short rib on miso polenta, and my very first breakfast menu. It’s always been my favorite meal of the day, and now I get the opportunity to surprise and delight guests with morning dishes that I love and crave."

Kim is currently also the chef at, and owner of, Pizzeria Lola, Hello Pizza and Young Joni.

Kyndred Hearth will be the flagship restaurant of the hotel and will be located on its first floor.

The restaurant is the latest update for the development, which is set to include 356,000 square feet of space when it is complete in October.
