October is National Chili Month! Minnesota Live wants to make sure you are ready – Rob Barrett, the man behind the website ‘Cooking for Dads” shares some of his favorite chili recipes.

Rob’s Chicken Chili

Ingredients:

1 leftover Costco chicken

1/2 onion chopped

4 sticks celery

8 baby carrots.

1 C chicken broth

1 pckg cream cheese

2 cups chopped vegetables

1 sp cumin

1 sp chili powder

1 sp Better than Bouillon – chicken

3 sp cooking sherry

2 sp thyme

1 sp oregano

1 sp sriracha sauce

1/2 C heavy whipping cream

1 can great northern beans, drained

1 can garbanzo beans, drained

1/4 instant mashed potatoes (optional)

directions:

1. Remove all the meat from the Costco chicken, chop and set aside.

2. Fill a large pan with 8-10 cups of water.

3. Place Chicken bones in water, add onion, celery and carrots. Make sure they are covered by the water.

4. Bring to a boil, then simmer for up to 4 hours.

5, Strain out bones and vegetables. Return broth to large pan. Add back the cooked carrrots and onion.

6. Add chicken broth, chicken meat, cream cheese, vegetables, spices, sherry, beans, and heavy cream. 

7. Bring to a boil and then simmer for 15-20 minutes

8. Add instant mashed potatoes if you want it thicker. (optional)

Rob’s 4 Meat Chili

Ingredients

3 pieces bacon Neuski’s

2” butter ( can sub 3 sp of olive oil)

1 onion chopped

1/2 jalapeno chopped

3 spoonfuls diced garlic

2 brats skins removed, just the meat.

1 lb ground turkey 

1 lb ground beef

1 26 oz can of Red Gold Diced tomatoes

2 26 oz can of Red Gold Crushed tomatoes

1 can  red kidney beans drained

1 can Great northern beans drained

1 can Bush homestyle baked beans

2 sp Italian seasoning

1 sp sriracha sauce

2 sp chili powder

2 sp honey

50 g dark chocolate (1 bar)

1/2 cup heavy cream

Directions:

1. Cut bacon into small pieces and fry in a large pan.  

2, Add butter, onion, garlic, and jalapeno.

3. Add Brat meat to pan and chop into small pieces.

4, Season ground meat with salt and pepper. Add to large pan, chopping into small bits. 

5. Drain away fat.

6. Add remaining ingredients and simmer over medium-low heat for an hour, stirring occasionally.
