Monday Night Meal: MN Fried Rice

Cooking for Dads host, Rob Barrett makes his version of a Minnesota Fried Rice using wild rice, of course!
Rob’s Minnesota Fried Rice
ingredients:
2 C cooked wild rice
1 C chopped assorted vegetables – peas, carrots, cauliflower etc.
1 ear of roasted corn About 1/4 C
the meat from 1 brat
1 large handful of chopped onion
2 cloves garlic chopped
2 eggs beaten
3 spoonfuls BBQ sauce
1” Butter
salt and pepper
Directions:
In large pan or wok, melt butter and add the brat meat, garlic, and chopped onion.
Cook for 2 or 3 minutes stirring often until brat meat is cooked through.
Add vegetables and corn. Cook for an additional minute while stirring.
Move to the side and add eggs, Let eggs set before stirring in.
Add rice and stir to combine. Add BBQ sauce and stir to combine.
Let it cook one more minute. Add a little salt and pepper.
