Turkey Black Bean Burritos

Laurie Crowell from Golden Fig shares a recipe that’s not only perfect for a Monday Night Meal, it’s a great way to use your leftover turkey in!

1 TB olive oil
1 onion- chopped
1 bell pepper sliced
1/2 tsp chili powder
salt and pepper to taste
1 TB minced garlic
1 can hominy drained and rinsed
3 C cooked turkey (smoked or roasted) shredded
1 can of black beans, drained
2 C shredded Monterey jack and cheddar cheese
1/3 C cilantro coarsely chopped
8 flour tortillas 
1 jar/can enchilada sauce
Sour cream, salsa, chopped tomatoes, hot sauce for serving

Preheat oven to 350

In large saute pan heat 1 TB olive oil.

Add onion and peppers and cook until half tender.

Add garlic and cook for one minute longer.

Turn off heat. Stir in rinsed hominy, cooked shredded turkey and black beans. 

Lightly oil pan. Scoop filling onto shell. Top filling with a good dose of cheese and a sprinkle of cilantro. Roll and place in pan. Pop in preheated oven and bake for 30 minutes. Remove from oven and pour enchilada sauce down the middle. Return to oven for another 10 minutes.

Serve with sour cream, tomatoes, salsa and hot sauce.
