Watermelon Salad

Whether you consider it a fruit or a vegetable – there’s no debate that watermelon is delicious. Nutrition coach Megan Sheley creates a Watermelon Salad that’s refreshing for a Monday Night Meal.

Watermelon Salad

3c chopped watermelon
1 corn off the cob
3/4c thinly sliced red onion
1.5c chopped cucumber – skinned
1/2c feta
1/3c basil


2 tbsp olive oil
2 tbsp red wine vinegar
pinch of salt and pepper

Make your salad dressing by combining the 3 ingredients into a small cup and whisking together, set aside. Chop all of your salad ingredients and assemble in a large bowl. Pour the dressing over the salad and toss well to combine. This portion should serve 4-5 people when using it as a side.
