12 Days of Cookies: Snow-capped sugar cookies

Baking instructor Nancy Burgeson creates her snow capped sugar cookies for day 4 of 12 Days of Cookies. She pairs the cookie with Bridgeman‘s Salted Caramel ice cream.

1 cup granulated sugar                       
1 cup powdered sugar
1 cup real butter                                
2 large eggs
1 cup minus 1 Tbsp cooking oil                   
1 Tbsp almond extract
4 cups flour                                       
1 tsp soda
1 tsp cream of tartar                           
1 tsp salt

Mix together granulated sugar, powdered sugar, and butter. Add cooking oil, eggs, and extract. Beat in flour, soda, cream of tartar, and salt.                                                                                  

Refrigerate for 2 hours. Roll into small balls and dip tops in sugar. Flatten cookie with a glass. Cookies should be very thin.                                                                                                             

Bake at 350° until lightly browned at edges.
