University of Minnesota Students take Culinary Arts to the Next Level

University of Minnesota design professor Barry Kudrowitz is taking culinary arts to the next level. This semester he is teaching a one of a kind "food Design" course at the U of M St. Paul campus. He says "so far the students are loving this, they get to eat everything that they are designing, which is awesome."

The idea came to Kudrowitz after sitting through a Harvard University class that combined cooking with science. Kudrowitz thinks it's a great way to get students excited about design principals. "Instead of using wood and plastic, they are using carrots and potatoes."

The class filled up quickly. In addition to the students, Kudrowitz invited chefs from Twin Cities' restaurants to join in on the class and help with the taste, and food science part of the course.

Chef Steven Brown from Tilia in Minneapolis was brought on board and is impressed with the students. "These guys are not professional chef's and this is a challenging workspace and a short period of time for them to do something. The fact that they can come up with this, really speaks to their creativity and the thought process in advance."

The class culminates next month with "Eat Design, An Edible Design Tasting Experience." The public is invited to the McNeal Hall Atrium in St. Paul on Dec. 11, 2013 at 7 p.m. You will be able to taste some of the students' final projects.
