BARRON: How to make Poached Salmon with Orzo

Todays extravaganza: Poached Salmon with Orzo.

She stages homes, and on every tuesday she creates beautiful and delicious dinners as part of the "open house" she conducts at various properties.

You can always win someone over through their stomachs right? Perhaps in this case... her meals are just as important as having granite countertops. : )

Anyway here is the recipe and directions for this delicious dinner that can be prepared in less than a half hour.

In a large skillet or electric skillet put the heat on the highest level of heat – (not smoking)! Once hot add the skin side of fish down toward the pan and cover briefly then add 1 C water and 2 T olive oil  cook the salmon (covered to poach) until it is almost done (no raw red in center) - once cooked do not over cook – but put on warm then add 1/2 c heavy cream and sprinkle fresh dill over top and salt and pepper keep warm.

In another skillet

Saute the mushrooms 2 C and 2 Cups of leeks in olive oil.  (reserve 1/2 cup each for orzo) once cooked line the platter for fish with the leeks and mushroom mixture – and then take fish skin off and place on top of the mushroom mixture.  Pour remaining cream sauce over fish and sprinkle more dill over top.

Mango Salsa

4 nice and ripe mangos chopped
1 jicama chopped
1 medium onion red chopped
1 bunch of cilantro chopped finely
1/2 jalapeño
1 juice of fresh lime
Once chopped add together and set aside

Orzo with fresh herbs
Once the orzo is cooked and tender you add chopped up sauté mushroom mixture approx 1 cup each of leek and mushrooms to the orzo, as well as mixed chopped herbs consisting of fresh basil, oregano, splash of dill, olive oil and salt and pepper to taste

When you display it on a plate you would put a little of the mushroom mixture orzo on plate, the salmon on top  and a dollop of salsa on the side or top for color and sweetness.  If you also want a Caribbean twist you can add a little whole coconut milk for a fantastic flavor to the cream mixture with the fish.
