'Jack Link's Jerky Day' in Minneapolis; Company Creates 'Meat Rushmore'

When it's a holiday, why not pull out all the stops?

Thursday will officially be "Jack Link's Jerky Day" in Minneapolis, as proclaimed by Mayor Betsy Hodges. The date coincides with National Jerky Day.

To pay homage to its product, Jack Link's created "Meat Rushmore." It's a 13-foot tall, 17-foot wide replica of the national monument in South Dakota. It is made of more than 1,600 pounds of beef, pork and turkey jerky.

Earlier this year, the Minong, Wisconsin-based company expanded its marketing and sales office at the Butler North Building in Minneapolis, bringing more than 100 jobs to the area, according to the Minnesota Department of Economic Development (DEED). It also has a production facility in Mankato.

Link Snacks, Inc. is the largest meat snack brand in the country, according to DEED.

The meat sculpture will be featured in New York City for the national holiday. Thursday is also Jack Link's Jerky Day across South Dakota.
